We run our own first-party analytics — no third-party analytics service is used, nothing is sold, and nothing is shared with an ad network. These are set only if you choose "Accept all" above:

Declining keeps both of these off — you can still browse the whole site normally. Choosing "Essential only" removes them if they were previously set.
Server logs and bot detection
Separately from cookies, our hosting stack logs standard technical request information (IP address, browser type, page requested) for security and diagnostics — this is normal web server operation, not a cookie, and isn't affected by the choice above. We also use this same information, in aggregate and with the IP address stored only as a one-way hash, to count total page views and estimate how much of our traffic is automated (search engine crawlers and similar bots) rather than human. This does not identify you individually and applies regardless of your cookie choice.
